Bedmi Poori with Aloo Sabzi

Bedmi Poori with Aloo Sabzi

Origin & Significance

Bedmi Poori with Aloo Sabzi is a popular North Indian breakfast dish, especially cherished in Uttar Pradesh and Delhi. This deep-fried, crispy poori is made with a spiced urad dal (lentil) and wheat flour dough, making it more flavorful and hearty than regular pooris. Paired with a tangy, spicy potato curry, it’s a favorite street food and festive dish, often enjoyed during special occasions and winter mornings.

Ingredients (Serves 4)

For Bedmi Poori:

  • 1 cup whole wheat flour
  • 1/2 cup soaked urad dal (black gram lentils)

  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt (or as needed)
  • 1 tablespoon semolina (optional, for extra crispiness)

Step-by-Step Preparation

📌 Step 1: Preparing the Poori Dough

📌 Step 2: Frying the Pooris

  • Heat oil in a deep pan for frying.
  • Divide the dough into small portions and roll them into medium-sized discs (pooris).
  • Gently slide the pooris into hot oil, pressing lightly for them to puff up.
  • Fry until golden brown and crisp, then drain on paper towels.

📌 Step 3: Preparing Aloo Sabzi

  • Heat oil in a pan and add mustard seeds and cumin seeds; let them splutter.
  • Add green chili and grated ginger, sauté for a few seconds.
  • Stir in chopped tomatoes and cook until soft.
  • Add turmeric, red chili powder, coriander powder, and salt. Cook for 1 minute.
  • Add mashed potatoes and mix well.
