A popular North Indian street food and breakfast dish, Chole Bhature combines spicy chickpea curry (chole) with deep-fried, fluffy bread (bhature). It’s a filling and indulgent meal, often served with pickles, onions, and a wedge of lemon for a zesty kick
Ingredients:
For Chole (Chickpea Curry):
- 1 cup chickpeas (soaked overnight)
- 2 medium onions (finely chopped)
- 2 large tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 2 tsp chole masala (store-bought or homemade)
- 1 tsp red chili powder
- 1/2 tsp garam masala
- 1 tbsp oil
- Salt to taste
For Bhature:
- 2 cups all-purpose flour (maida)
- 2 tbsp semolina (sooji)
- 1/2 cup yogurt
- 1/2 tsp baking powder
- Water (for kneading)
- Oil (for frying)
Instructions:
1. Cook chickpeas: Pressure cook soaked chickpeas with water and a pinch of salt until soft.
2. Prepare the curry: Heat oil, add cumin seeds, and sauté onions until golden. Stir in ginger-garlic paste and cook. Add tomato puree, turmeric, chole masala, red chili powder, and salt. Cook until oil separates.
3. Combine: Add boiled chickpeas and simmer for 15 minutes. Sprinkle garam masala before serving.
4. Make the bhature: Knead flour, semolina, yogurt, baking powder, and water into a soft dough. Rest for 1 hour. Roll into discs and deep fry in hot oil until puffed and golden.
5. Serve: Pair hot bhature with spicy chole, onions, and lemon wedges.
