Origin & Significance

Idli-Sambar is a traditional South Indian breakfast that originated centuries ago in Tamil Nadu and Karnataka. Soft, fluffy idlis (steamed rice cakes) paired with spicy, tangy sambar (lentil soup with vegetables) make for a light yet nutritious meal. Ingredients (Serves 4)

For Idli (Steamed Rice Cakes)

  • 2 cups idli rice (or regular rice)
  • 1 cup urad dal (split black gram without skin)
  • ½ teaspoon fenugreek seeds
  • Salt, to taste
  • Water, as needed

For Sambar (Lentil Soup)

  • 1 cup toor dal (pigeon peas)
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • ½ cup vegetables (carrots, drumsticks, pumpkin, brinjal, etc.)
  • 1 tablespoon tamarind pulp
  • 1 teaspoon sambar powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon mustard seeds
  • 1-2 dry red chilies
  • 8-10 curry leaves
  • 1 tablespoon oil or ghee
  • Salt, to taste
  • Fresh coriander leaves, for garnish

 

Step-by-Step Preparation

📌 Step 1: Preparing the Idli Batter

  • Wash and soak idli rice and urad dal separately for 6 hours.
  • Grind urad dal into a smooth paste, then grind rice to a slightly coarse consistency.
  • Mix both batters, add salt, and ferment overnight (8-12 hours) until it doubles in volume.

📌 Step 2: Steaming the Idlis

  • Grease idli molds and pour the batter.
  • Steam in an idli cooker or steamer for 10-12 minutes until soft and spongy.

📌 Step 3: Cooking the Sambar

  • Pressure cook toor dal with turmeric and water until soft. Mash it well.
  • Heat oil in a pan, add mustard seeds, red chilies, and curry leaves.
  • Add onions, tomatoes, and vegetables, sauté for a few minutes.
  • Pour in dal, tamarind pulp, sambar powder, and salt. Let it simmer for 10 minutes.
  • Garnish with coriander leaves and serve hot.

  • Serve steaming idlis with sambar and coconut chutney on the side.
