Gatte Ki Sabzi

Gatte Ki Sabzi

Origin & Significance

Gatte ki Sabji is a signature dish from the royal kitchens of Rajasthan. This flavorful curry is made with gram flour (besan) dumplings simmered in a tangy and spiced yogurt-based gravy. Since Rajasthan is an arid region where fresh vegetables can be scarce, this dish evolved as a delicious and protein-rich alternative using pantry staples. It pairs perfectly with bajra roti, jeera rice, or parathas, making it a cherished part of Rajasthani cuisine.

Ingredients (Serves 4)

For the Gatte (Gram Flour Dumplings)

  • 1 cup besan (gram flour)
  • ½ teaspoon carom seeds (ajwain)
  • ½ teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon salt (or to taste)
  • 1 teaspoon oil
  • ¼ teaspoon baking soda (optional, for softer gatte)
  • Water (as needed, to knead the dough)

For the Gravy

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • ½ teaspoon mustard seeds
  • 1 teaspoon ginger-garlic paste
  • 1 medium onion, finely chopped
  • 1 medium tomato, pureed
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • 1 cup yogurt, whisked
  • 2 tablespoons besan (gram flour)
  • Salt (to taste)
  • 2 cups water
  • 1 teaspoon kasuri methi (dried fenugreek leaves, optional)
  • Fresh coriander leaves for garnish

Step-by-Step Preparation

📌 Step 1: Preparing the Gatte (Dumplings)

  • In a bowl, mix besan, ajwain, turmeric, chili powder, salt, and oil.
  • Add little water gradually and knead into a firm dough.
  • Divide into 4 equal portions and roll them into cylindrical logs (about ½ inch thick).
  • Boil water in a pan, add the rolls, and cook for 8-10 minutes until they float.
  • Remove, cool slightly, and cut into 1-inch pieces. Keep aside.

📌 Step 2: Making the Gravy

  • Heat oil in a pan and add mustard seeds & cumin seeds. Let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Stir in ginger-garlic paste and cook until the raw smell disappears.
  • Add tomato puree and cook for 3-4 minutes until oil separates.
  • Mix in turmeric, chili powder, coriander powder, and salt.

📌 Step 3: Preparing the Yogurt Mixture

  • In a bowl, whisk yogurt with 2 tablespoons of besan (prevents curdling).
  • Pour this into the pan, stirring continuously on low heat.
  • Add water and bring to a gentle simmer.

📌 Step 4: Cooking the Gatte

  • Add the boiled gatte to the gravy and let it simmer for 5-7 minutes.
  • Sprinkle garam masala and kasuri methi for enhanced flavor.

📌 Step 5: Final Touch & Serving

  • Garnish with fresh coriander leaves.
  • Serve hot with bajra roti, chapati, or jeera rice.
