Origin & Significance
Gatte ki Sabji is a signature dish from the royal kitchens of Rajasthan. This flavorful curry is made with gram flour (besan) dumplings simmered in a tangy and spiced yogurt-based gravy. Since Rajasthan is an arid region where fresh vegetables can be scarce, this dish evolved as a delicious and protein-rich alternative using pantry staples. It pairs perfectly with bajra roti, jeera rice, or parathas, making it a cherished part of Rajasthani cuisine.

Step-by-Step Preparation
📌 Step 1: Preparing the Gatte (Dumplings)

- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and cook until the raw smell disappears.
- Add tomato puree and cook for 3-4 minutes until oil separates.
- Mix in turmeric, chili powder, coriander powder, and salt.
📌 Step 3: Preparing the Yogurt Mixture
- In a bowl, whisk yogurt with 2 tablespoons of besan (prevents curdling).
- Pour this into the pan, stirring continuously on low heat.
- Add water and bring to a gentle simmer.
