For the Spiced Onion Filling

  • 2 large onions (finely chopped)
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon fennel seeds (saunf)
  • 1 teaspoon coriander seeds (crushed)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon dry mango powder (amchur)
  • 1/2 teaspoon black salt
  • 1/2 teaspoon salt (adjust to taste)
  • 2 tablespoons gram flour (besan)
  • 2 green chilies (finely chopped)
  • 1 tablespoon fresh coriander leaves (chopped)
  • 1 tablespoon oil

For Frying

  • Oil for deep frying

Step-by-Step Preparation

📌 Step 1: Making the Dough

  1. In a large bowl, mix all-purpose flour, salt, and carom seeds.
  2. Add ghee or oil and rub it into the flour with your fingers until the mixture resembles breadcrumbs.
  3. Slowly add water, kneading into a firm yet smooth dough.
  4. Cover with a damp cloth and let it rest for 30 minutes.

  1. Divide the dough into 8 equal portions and roll each into a small ball.
  2. Flatten each ball into a 3-4 inch circle using a rolling pin.
  3. Place 2 tablespoons of the onion filling in the center.

  5. Lightly press and flatten each kachori.

  1. Heat oil in a deep pan on low-medium heat (not too hot, or the kachoris won’t cook evenly).
