Ingredients (Makes 8 Samosas)

For the Dough (Outer Crust)

  • 2 cups all-purpose flour (maida)
  • 1/4 cup ghee or oil
  • 1/2 teaspoon carom seeds (ajwain)
  • 1/2 teaspoon salt
  • 1/2 cup water (adjust as needed)

For the Spiced Potato Filling

  • 3 medium potatoes (boiled, peeled, and mashed)
  • 1/2 cup green peas (boiled)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger (grated)
  • 1 green chili (finely chopped)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh coriander leaves
  • Salt to taste
  • 1 tablespoon oil

For Frying

  • Oil for deep frying

Step-by-Step Preparation

📌 Step 1: Making the Dough (Samosa Crust)

  1. In a large bowl, mix all-purpose flour, salt, and carom seeds.
  2. Add ghee or oil and rub it into the flour with your fingers until the mixture resembles breadcrumbs.
  3. Slowly add water, kneading into a firm dough. Cover and let it rest for 30 minutes.

📌 Step 2: Preparing the Spiced Potato Filling

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add grated ginger and chopped green chilies, sauté for a few seconds.
  3. Mix in the mashed potatoes, boiled peas, turmeric, coriander powder, cumin powder, red chili powder, and salt. Stir well.
  4. Add garam masala, lemon juice, and chopped coriander leaves. Mix and cook for 2-3 minutes.
  5. Remove from heat and let the mixture cool completely.

📌 Step 3: Shaping the Samosas

  1. Divide the dough into 4 equal balls and roll each into an oval shape (about 6 inches long).
  2. Cut each oval in half to make two semicircles.
  3. Take one semicircle, apply water to the edges, and shape it into a cone.
  4. Fill the cone with 2 tablespoons of the potato filling.
  5. Seal the edges tightly by pressing them together. Repeat for all samosas.

  1. Heat oil in a deep pan on low-medium heat (not too hot, or the crust won’t crisp properly).
  2. Fry the samosas in batches until golden brown and crispy (about 8-10 minutes per batch).
  3. Drain excess oil on paper towels.

  • Serve hot with tamarind chutney, mint chutney, or masala chai for a classic experience.
